I might use it to add a text search for screenshots. Basically OCRed images as PDF.
Addendum: The special needed hardware aka NPU is needed to sell more hardware. It's not needed to take screenshots or search text in applications. This requirement will be ditched as soon as companies demand surveillance over recall.

I’d compare the situation to a screw driver vs a Swiss Army knife. One is clearly superior if you have to fasten a lot of screws. Now you might use a power drill to fasten screws faster when you don’t need to be too delicate.
Now consider a note taking app or document editor. If you select an image that has text, it could be useful if there is a transcribe option. Automation akin to a power drill. But this should be in some sort of context menu labelled ‘transcribe’ or something. Not a pushy AI button that wants you to do something, anything, as long as you make use of AI. Also frankly I really don’t care at all if the transcribe function uses AI or automated OCR extraction. I just care about the function.
Also, generative AI seems like a never ending race to consume more and more power in ever larger LLMs that spews garbage so I won’t use it, period. Society could make better use of those resources and be better off without the **** it produces. I would only use efficient, private and functionally to the point extractive AI, maybe.

I will just use #Linux, which doesn't have this crap, so won't even ask if I “wish to try it”!
